These Easy Soup Recipes are some of our favorite dinner ideas to make when we’re short on time or energy! They come together quickly and are perfect for meal prep during busy weeks.
You know that soup is the way to my hearty, especially in the cooler months here in Manitoba!
But sometimes soup can mean a lot of chopping and I hear you — it takes some time.
I rounded up some of my favorite easy soup recipes — with fewer ingredients and quicker prep — so you can enjoy a steaming bowl of something cozy even on days you’re feeling less motivated to cook dinner!
These soup recipes use at least one of my favorite soup shortcuts:
Canned or frozen veggies for less chopping
Skip the meat or add in other forms of protein (= shorter cook time)
Use leftover cooked proteins
Bring in the slow cooker for more hands-off cooking
Use quick cooking pasta like tortellini or ramen instead of rice, potatoes or regular pasta so dinner is on the table quicker
Have a shorter ingredient list overall — but this doesn’t mean we’re skimping on flavor!

Choose frozen veggies: frozen veggies are still vegetables! If you’re not a fan of frozen peas or corn, try buying a frozen mirepoix blend which is the base for many soup recipes, or simply a bag of frozen, chopped onion (save the tears!).
Keep some homemade chicken stock or broth in the freezer: yes, you can definitely use the carton if you don’t have homemade stock but there’s just something about homemade that can’t be beat. Freeze it in large freezer bags so it thaws quickly!
What to serve with soup:
If you’re short on time, a store bought loaf of crusty bread or frozen garlic bread is a fabulous addition.
If you have a little more time or want to do some baking to add to your freezer stash, I highly recommend making this Garlic Bread, a batch of Momโs Homemade Buns, or some simple Whole Wheat Bread — which makes a mean grilled cheese if you need to stretch your soup even further.
How to store leftover soup:
Most soup stores well in the refrigerator or freezer, with a few exceptions:
potato soups store best in the fridge, but reheat perfectly over the course of 4 days.
rice and pasta soups are best eaten soon after making, or simply cook the pasta or rice separately and add in to each bowl so they don’t get too soft.
I wouldn’t recommend freezing soup with potatoes, pasta or rice in it — but these can be cooked separately and added after thawing and reheating.
Vegetable soups without potatoes, rice or pasta can usually be frozen for several months and reheat well. Check the details on each recipe to be sure!
