This Crockpot Tortellini Soup recipe has so many of my favorite things! I love a creamy soup and I love me some tortellini. The fact that it’s made in the Crockpot is just the cherry on top!

While I make this soup all year long, it’s especially scrumptious when it’s cold outside. There’s really nothing better than a creamy soup to help warm your bones! This one really hits the spot since it’s so hearty.

I’m also a huge fan of just how simple this Crockpot tortellini soup recipe is! One those crazy busy weeknights when I want to take it easy, this is one of my go-to recipes.

Creamy Tortellini Soup Ingredients:

  • Italian Sausage – Some grocery stores offer Italian turkey sausage if that better fits your needs!
  • Tortellini – It can be fresh or frozen.
  • Garlic
  • Carrots and Celery – I always try to make sure that these veggies are cut in the same size pieces so they cook evenly and fit on the spoon nicely.
  • Onion – A yellow onion is preferred but a white onion will also get the job done.
  • Cream – Any kind will work well! Heavy cream is usually my go-to.
  • Parmesan – For the very best consistency and flavor, consider grating your parmesan cheese right off the block.
  • Tomato Paste – Don’t swap this with any other tomato ingredient.
  • Spinach – I like to chop it up before adding it to the soup. That way, you’re not trying to fit huge pieces of spinach on your spoon!
  • Seasonings – Just a little salt and Italian seasoning it all I use to enhance the other flavors at play. Feel free to add in any other seasonings you like.

How to make Creamy Crockpot Tortellini Soup

You’re going to love how easy this recipe really is. For more detailed step by step instructions, keep on scrolling down to the recipe card at the bottom of the page.

  • Cook the Italian sausage and onion in a skillet until fully cooked.
  • Pour the cooked sausage into the Crockpot. Add the tomato paste, seasonings, garlic, veggies and broth. Cover and cook.
  • Stir in tortellini, spinach, cream and cheese.
  • Cover and let it cook until the tortellini is al dente.

Variations and Substitutions

  • Change the meat: Not a fan of Italian sausage? Swap it with chicken! Leftover roast chicken in your fridge can be shredded or chopped and used in place of the sausage (pro tip: save the carcass and make your own chicken stock!)
  • Make it meatless: You can omit the meat entirely for a vegetarian soup recipe. Add some beans to supplement the missing protein.
  • Make it spicy: Italian sausage offers enough heat for me personally, especially since I’m usually cooking for my kids! You can feel free to heat thing up with some crushed red pepper flakes if desired.
  • Change the pasta: You can substitute the tortellini with virtually any other pasta that you prefer. However, if it’s not fresh pasta, you may want to cook it separately before adding it in.

How to store Creamy Tortellini Soup

This Crockpot tortellini soup will keep well in the fridge for about 2-3 days. Note that the tortellini will soften significantly the longer it sits.

When you reheat this soup, do so for just 45-60 seconds at a time in the microwave and stir every time it stops.

Can I freeze Creamy Tortellini Soup?

Here’s the deal – I don’t typically recommend freezing cooked tortellini. It becomes much softer and the texture isn’t the same.

However, you can if you need to! The flavors will still be great, but the texture will be softer.

The beautiful thing about this tortellini soup with sausage is that it really has all of the elements of a meal in one bowl! It’s got carbs, protein and veggies. With that being said, of course you can plate it with some sides like Garlic Bread, Mom’s Homemade Buns or Homemade Dinner Rolls to help soak up all of that broth.

Ingredients

  • ¾ lb Italian sausage mild or spicy (mild or spicy) about 375 grams
  • ½ onion (finely diced)
  • 2 tablespoons tomato paste
  • 1 ½ teaspoons Italian seasoning
  • 3 cloves garlic (minced)
  • ¾ teaspoon salt
  • 4 cups low sodium chicken broth
  • 2 large carrots (peeled and chopped)
  • 2 ribs celery (sliced)
  • 3 cups fresh or frozen cheese tortellini (about 250 grams)
  • 2 cups fresh chopped spinach or kale
  • 1 cup cream (any kind will work)
  • ¼ cup finely grated Parmesan cheese

Instructions

  • In a large skillet, cook Italian sausage and onion over medium-high heat, stirring often, until browned and drain excess fat (if desired).
  • Add tomato paste, Italian seasoning, garlic and salt. Cook and stir 2 minutes.
  • Pour Italian sausage mixture into a 4-6 quart slow cooker and add in the broth, carrots, celery, and onion.
  • Cover and cook on low for 5-6 hours or on high for 2-3 hours, until the vegetables are tender.
  • Stir in tortellini, spinach (if using), cream and Parmesan. Cover and let cook for 10-15 minutes until tortellini are al dente.
  • Taste, adjust seasonings as desired, and serve.

Notes

Ingredients and Substitutions: 
  • Italian sausage: you can swap the sausage for chicken breasts (or use leftover Crockpot Shredded Chicken or Instant Pot Shredded Chicken, no browning required), turkey sausage or omit and sub in a can of white beans for a meatless version.
  • Spices and seasonings: Italian sausage can be quite flavorful and spicy, so for that reason I didn’t add pepper or red chili flakes. Feel free to add some at the end after tasting if desired.
  • Tortellini: you can sub in any pasta you like, but if you aren’t using a fresh pasta I recommend boiling it separately and add after cooking for best results.
  • Cream: any kind of cream will work here! A higher fat cream will have a richer flavor, but you can use whatever you have in your fridge.

    This is delicious. I did leave out the sausage this time as I was in the mood for meatless, but I’m sure it will be yummy with it, as well.
