  • Bell pepper & spinach: I love sneaking veggies into this casserole to make it a little more nutritious! Feel free to mix in other vegetables like mushrooms or tomatoes, or use frozen spinach if fresh isn’t available.
  • Green onions: They give a subtle oniony zing! Regular onions work, too; just make sure to sauté them first to soften their sharpness.
  • Shredded cheddar cheese: This is baked into the casserole, so each bite is wrapped up in melty goodness! You can use other cheeses like Monterey Jack or Swiss if you prefer something different.
  • Eggs & half and half: These create the custard-like base that binds everything together.

  • Pour into the casserole dish.

There are so many ways to make this easy breakfast casserole even easier by prepping ingredients ahead:

  • Chop all vegetables.
  • Cook and chop all the meat.
  • Shred your cheese.
  • If you like, you can complete everything up until the point of adding the tater tots the day before, then cover and refrigerate for 24 hours. I don’t like to add the tater tots until I’m baking because I want them crispy!
  • To freeze the casserole, assemble everything, wrap it in plastic wrap and foil, and freeze for up to 4 months. You can add the tater tots on top of the casserole as they’re stored in the freezer, so they won’t lose their texture. 

Baking a Frozen Casserole

I recommend thawing the casserole at least somewhat (overnight in the fridge or a few hours at room temperature) before baking for the most even results.

Bake as directed, adding 5 or 10 extra minutes as needed until heated through.

Ingredients

  • 14 breakfast sausage links (cooked and sliced) about 300g
  • 1 bell pepper finely diced (80g)
  • 1 cup fresh spinach finely chopped (40g)
  • ¼ cup green onions sliced
  • 1 ½ cups shredded cheddar cheese (85g)
  • 10 large eggs
  • 1 cup half and half
  • teaspoon salt
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 70 tater tots (575g)
  • ¼ teaspoon seasoning salt

Instructions

  • Lightly grease a 9×13″ baking dish with non stick spray and preheat oven to 350 degrees F.
  • Stir together sausages, peppers, spinach, green onions, and cheese in the baking dish.
  • In a large bowl, whisk together eggs, cream, salt, parsley and pepper. Pour over the vegetables in baking dish.
  • Top with rows of tater tots to cover the dish (they may sit about half way down in the egg mixture) and sprinkle with seasoning salt. Bake for 40-45 minutes until eggs are completely set and tots are golden.
  • Slice and serve.
