I love bold Tuscan flavors! To me, there’s just nothing more satisfying than the combination of sun-dried tomatoes, chicken, and spinach. And, of course, plenty of parmesan and garlic!

This easy Tuscan Chicken recipe comes together in just a few simple steps. It’s creamy and cheesy and even offers plenty of nutrition from the spinach. It checks all of the right boxes!

While you can plate this creamy chicken all by itself… I love topping mine right on top of some Buttered Noodles. That way, not a single drop of that delicious creamy sauce goes to waste!

Tuscan Chicken Ingredients Needed:

  • Chicken – Boneless, skinless chicken breasts are my favorite to use, but thighs work as well! Just make sure they’re also boneless and skinless.
  • Cream – Heavy cream is my favorite to use because it’s so rich and thick. If you use half and half instead, you may want to whisk some cornstarch into it to thicken it up a little bit.
  • Sun-Dried Tomatoes – You can swap these with roasted red peppers if preferred.
  • Spinach – Not a spinach fan? No problem! Kale also works well in this versatile recipe.
  • Garlic – You can always add a little more if you’d like. When it comes to garlic, measure with your heart!
  • Parmesan – For the very best flavor and consistency, shred this cheese right off the block.
  • Seasonings – Italian seasoning, paprika, salt and pepper are all you need to create the very best flavor. Adjust as needed.

How to make this Creamy Tuscan Chicken recipe.

This one skillet recipe comes together so easily! Scroll down to the recipe card for more information about the ingredients measurements and process.

  • Place the chicken on a cutting board, cover in plastic wrap, then flatten the thick side with a flat meat mallet or a rolling pin.
  • Combine the seasonings and sprinkle evenly over the chicken.
  • Whisk together the cream, sun dried tomatoes, parmesan, garlic, salt and pepper.
  • Sear chicken on both sides until golden. This should take about 3-4 minutes per side.
  • When the chicken is browned on both sides, add the cream sauce to the skillet. Cover and simmer on medium-low heat until the chicken is cooked through and the sauce has thickened slightly.
  • Add spinach and cook until wilted.

Recipe Tip

Use a meat thermometer to check if the chicken is done cooking. You’ll know it’s ready when the thermometer reads 165°F.

Variations and Substitutions

  • Change the greens – Spinach is my favorite to use, but kale also works well! You can also leave them out and serve with a side salad.
  • Use roasted garlic – You can swap the fresh garlic with Roasted Garlic for even more garlicky goodness.
  • Thicken the sauce – If your sauce is on the thinner side, no worries! Whisk together 1 tsp corn starch and 1 tsp water or chicken broth and stir into the sauce while it’s simmering.

How to store Creamy Tuscan Chicken Breasts

Store your leftover creamy chicken breasts in an airtight container in the refrigerator for 2-3 days.

To reheat, add a splash of broth or water and pop it in the microwave for 30 seconds at a time (or less), or place it in a covered skillet on the stovetop on low heat.

Can I freeze Tuscan Chicken?

Yes! First, let the Tuscan chicken with cream sauce cool to room temperature. Then, transfer everything to a freezer safe container and freeze for up to 3 months. Don’t forget to date and label! Let it thaw in the fridge prior to reheating (you can follow the same instructions as above).

Serving suggestions:

I love piling my creamy Tuscan chicken on top of pasta like spaghetti or bucatini! It’s also great with Mashed Potatoes or Baked Rice. You really just want to make sure there’s something to help soak up the sauce! This crusty No Knead Artisan Bread, homemade Garlic Bread or Cheddar Bay Biscuits also do the trick!

Ingredients

  • 1 tablespoon canola oil
  • 4 boneless skinless chicken breasts (about 2 lb)
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • teaspoon black pepper

Cream Sauce

  • cups heavy cream
  • cup sundried tomatoes (drained and chopped)
  • ¼ cup shredded Parmesan cheese
  • 2 teaspoons minced garlic (about 2-3 cloves)
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 1 cup chopped fresh spinach
  • corn starch (optional)

Instructions

  • Heat a large skillet over medium-high heat and add the oil.
  • Place chicken breasts on a cutting board, cover in plastic wrap and flatten the thick side with a flat meat mallet or a rolling pin.
  • Combine salt, Italian seasoning, paprika and pepper and sprinkle over chicken.
  • Sear chicken on both sides until golden, about 3-4 minutes per side.
  • Optional: you can deglaze the pan with about ¼ cup of chicken broth or a splash of water before adding the sauce if you have lots of brown bits left over.

Cream Sauce

  • Meanwhile, whisk together the cream, sun dried tomatoes, Parmesan, garlic, salt, and pepper.
  • When the chicken is browned, add the sauce to the pan. Cover and simmer on medium-low heat until the chicken is cooked through and the sauce has thickened slightly, about 5-7 minutes (check the internal temperature of the chicken to ensure it is at least 165 degrees F). If sauce is not as thick as you would like, whisk together 1 teaspoon corn starch and 1 teaspoon water and stir into the sauce.
  • Serve over pasta or as desired.

Notes

Ingredients and Substitutions:
Chicken: You can use boneless, skinless chicken thighs instead of breasts. I would aim for 2 lbs of meat.
Cream: You can use a lighter cream, but keep in mind that the sauce will not be as thick and rich (you may want to add 1 teaspoon corn starch to compensate)
Sun Dried Tomatoes: Try swapping the sun dried tomatoes for roasted red peppers.
Spinach: Kale also works well here!

    This was a big hit with my family. I would definitely let the chicken sit for a couple of minutes on a cutting board before cutting it and then put the sauce on top because The chicken does get watery. But this recipe is right on!!!
