There’s something about crunchy leaves and crisp weather that makes me want to make this Caramel Apple Cobbler on repeat! However, I won’t judge you if you enjoy this year-round. 

For this recipe, we ditch the premade apple pie filling and instead cook down fresh apples, brown sugar, flour, and cinnamon at the same time as the topping (yay for less prep!).

My favorite part is the crumbly cobbler topping! This topping is made with basic pantry staples to form a biscuit-like dough that bakes up crisp on the outside and fluffy on the inside. 

It makes it’s own caramel sauce as it bakes, so there’s plenty for drizzling over top.

Caramel Apple Cobbler Ingredients:

  • Apples: I love using Granny Smith apples for their tart flavor and firmer texture. They hold up well in baking, but Honeycrisp or Pink Lady work too!
  • Brown sugar: They key for making the filling gooey and sweet!
  • All-purpose flour: Used to thicken the apple filling and for the cobbler topping. You can swap with whole wheat flour for a heartier version!
  • Cinnamon: A classic spice that gives this cobbler that warm fall feel.
  • Granulated sugar: Sweetens the cobbler topping and helps create a slightly crisp texture when sprinkled on before baking.
  • Baking powder: A leavening agent that helps the cobbler topping rise and become fluffy!
  • Cold butter: Creates the flaky texture of the cobbler topping. Use cold butter to get the best result.

  • Caramel sauce: Drizzle some caramel sauce on top for an extra sweet, rich finish! Store-bought or homemade caramel sauce will work.

  • Add peeled and chopped apples to a baking dish, then mix with sugar, flour, and cinnamon.
  • Spread the apple filling into a baking dish.
  • Make the cobbler dough.
  • Drop the cobbler dough in spoonfuls over the apple mixture. Sprinkle with sugar and bake until golden.

Variations and Substitutions

  • Add nuts: Add some chopped pecans to the cobbler or on top of the cobbler as it bakes!
  • Maple syrup: Swap the caramel sauce for maple syrup for another fall flavor. 
  • Swap the fruit: you can add in fresh or frozen cranberries or another fruit to make it your own.

How to store leftover cobbler:

Store any leftovers in an airtight container in the fridge for up to 3-4 days or in the freezer for up to 3 months. Just make sure to let it thaw in the fridge overnight before reheating!

To reheat, warm it in the microwave or in the oven at a low temperature until heated through. You can also serve it cold, which can be just as delicious!

Make-ahead option:

If you want to make it in advance, assemble the cobbler, but don’t bake it. Cover tightly and refrigerate for up to 24 hours.

When you’re ready, just pop it in the oven and bake as directed. If you have pre-sliced apples, it’s a good idea to rinse them in water to prevent browning.

Ingredients

  • 8 cups peeled and chopped apples (I prefer Granny Smith)
  • ½ cup brown sugar
  • 2 tablespoons all purpose flour
  • ¼ teaspoon cinnamon

Cobbler

  • 1 cup all purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup cold butter cubed
  • 3-4 tablespoons low fat buttermilk
  • sugar for sprinkling if desired
  • caramel sauce for drizzling if desired

Instructions

  • Preheat the oven to 350°F.
  • Lightly grease an 8×11″ or 9×9″ baking dish.
  • Add apples, sugar, flour and cinnamon to the baking dish and stir to coat evenly. Set aside.

Cobbler

  • In a medium bowl, stir together the flour, sugar, baking powder and salt.
    1 cup all purpose flour, ½ cup granulated sugar, 1 teaspoon baking powder, ¼ teaspoon salt
  • Add the butter and cut in until pea-sized chunks form. Add buttermilk, one tablespoon at a time, just until cobbler dough holds together (you don’t want it too wet!).
    ¼ cup cold butter, 3-4 tablespoons low fat buttermilk
  • Drop cobbler dough over the apples in the baking dish by rounded tablespoons, leaving space for it to expand. If desired, sprinkle the dough with a little granulated sugar to crisp the tops.

  • Bake, uncovered, for 50-60 minutes, until the filling is thickened and bubbly and the cobbler is light golden brown. If top has browned but apples are not saucy and bubbly yet, cover with foil and continue baking 10 more minutes. Drizzle with additional caramel sauce while serving if desired.

Notes

Ingredients and Substitutions:
Apples: firm, tart baking apples work best in here! I prefer Granny Smith but you could also use Honeycrisp, Gala or Pink Lady.
Brown Sugar: you can swap this for granulated sugar but it’s what makes our caramel sauce!
Flour: you can swap the flour for whole wheat for a dessert that’s higher in fibre.
Make ahead:
You can prep this cobbler ahead, but you may want to rinse the apples under cold water before adding to the pan to limit browning. If you do this, you can prep, cover tightly and refrigerate up to 24 hours before baking.
