So grilling potatoes is my new favorite thing.

Maybe I’ve mentioned this before (nod your head and smile like you actually read those posts), but I never really cared much about grilling before this summer. This summer, I’m all about bringing you the best of the summer season.

Potato salad. Grilled potatoes. Barbecue. Bacon.

Seemed like a pretty good combo to me.

And it was.

Maybe I’ve also mentioned once or twice that I don’t reeeeally eat salad. I mean, I eat potato salad (duh). And fruit salad and taco salad and maybe jello salad (it’s a thing, right?). But I just can’t do regular green salad.

And in most cases, I even cringe at a jar of mayo. But potato salad? I love it! Even the regular old potato salad with just the mayo. I don’t know what it is. There’s nothing I love more than some potato salad with my barbecue.

I thought about adding barbecue sauce to my potato salad “dressing”, and I’m a big fan of barbecue and bacon together. And I really wanted to try making a potato salad with grilled potatoes (warm or cold) to add to that smokey barbecue bacon potato salad.

BBQ Bacon Potato Salad with Grilled Potatoes

This BBQ Bacon Potato Salad with Grilled Potatoes is a new twist on a classic! Perfect for summer barbecues

Ingredients

  • 1 lb Barbecue Blend BBQ Ready pack from The Little Potato Company
  • 2 tbsp oil
  • 1/2 cup mayonnaise
  • 1/4 cup barbecue sauce
  • 1 tbsp white vinegar
  • 1 tbsp water
  • 2 slices bacon cooked and crumbled
  • 2-4 tbsp green onions chopped

Instructions

  • Preheat grill to medium-high (about 450 degrees F). Open BBQ Ready pack and, if desired, halve or quarter potatoes. Toss with oil and seasoning pack. Grill potatoes until tender, stirring occasionally (about 25-30 minutes on my grill). Cool to room temperature (or you can serve warm if desired!).
  • In a small bowl, combine mayonnaise, barbecue sauce, vinegar and water with a whisk until smooth. Add to grilled potatoes along with bacon and green onion and stir until combined. Salt to taste. Serve or refrigerate until chilled.

    It would be so hard to pick! Probably roasted potatoes on the barbecue because unfortunately my children don’t love the potato salad like my hubby and I do… or that maple potato salad would probably be the undoing of my husband! Ha!

    Bacon can do no wrong. Once my mom started adding that to her potato salad, we’ve never let her turn back! It’s time for BBQ to meet our picnic table because good gosh it looks amazing!

    I was never a fan of traditional potato salad, but this looks and sounds amazing. Little Potato Company? Frozen or chilled? Where do I find in the grocery store?

    I used to work in a B-B-Q joint and one of the items on our menu was a stuffed baked potato! I never even thought to make a tater salad using B-B-Q sauce (w/ bacon no less). Sounds delish!!! (Though, I would most definitely try a bit of sour cream on top.)

    Ashley, grilled potatoes. . swoon. . I LOVE grilling veggies during the summer . . veggies and fruit don’t get enough grill love so I try to do my part 🙂 If I won, I would make a grilled potato salad!!! I love yours!!!! delicious!

    this looks amazing! i made potato salad tonight! the first thing i would make would be potato hash with my fave jalapeno chicken sausage from trader joes and some roasted brussel sprouts.

    Both of these potato salads look totally delicious, but the first one I would make for my husband would be the warm maple bacon potato salad, getting up early so I could serve it along side cheesy eggs, English muffins, melon slices and hot hazelnut coffee. This would totally float his boat, in a very good way. 🙂
