Some nights, you just need a quick, satisfying dinner without a lot of fuss. That’s where these juicy Baked Pork Chops come in!
These thick pork chops are seasoned with just a handful of pantry spices, like brown sugar, garlic powder, and paprika. Then, they’re transferred to the oven, where they develop a flavorful caramelized crust while staying perfectly tender and juicy on the inside.
In just 20 minutes, you’ll have a protein-packed main dish that pairs beautifully with Garlic Mashed Potatoes, Roasted Green Beans, and a side of Mom’s Homemade Buns for soaking up all those delicious juices!
Why you’ll love these juicy pork chops:
- One-pan: Minimal cleanup with a single baking dish, so it’s great for weeknight meals.
- Quick and easy: Just 5 minutes of prep and 15 minutes in the oven for a stress-free meal.
- Perfectly juicy: The fool-proof method results in tender, moist pork chops every time!
Baked Pork Chops Ingredients:
- Pork Chops: I use boneless pork chops for this recipe. I recommend pork loin chops that are about 1″ thick. If you use thinner pork chops, keep in mind that the cooking time will change.
- Spice Rub: We’re making a sweet and spicy homemade spice rub out of brown sugar, seasoning salt, garlic powder, Italian seasoning, ground mustard, black pepper, and paprika.
- Oil: Adds moisture and helps the seasonings stick to the pork. I use canola oil because it has a neutral flavor and high smoke point, but olive oil works as well.
How to make easy Baked Pork Chops:
These Baked Pork Chops come together in just 20 minutes! Find the detailed recipe down in the recipe card.
- In a small bowl, combine brown sugar, seasoning salt, garlic powder, Italian seasoning, ground mustard, pepper, and paprika.
- Rub the pork chops with oil all over, then coat them in the seasonings. Place the seasoned pork into a greased baking dish, then bake until golden and juicy!
Variations and Substitutions
- Spice rub: I make my own homemade spice blend, but feel free to use your favorite spice rub for this recipe. You can also play around with the amounts in this recipe to get your desired result. For example, you can add smoked paprika or cayenne for extra heat or swap Italian seasoning for fresh herbs.
- Bone-in pork chops: If you want even more flavor, use bone-in thick-cut chops instead! Just make sure to adjust the cooking time, as bone-in chops take a little longer.
Is it better to bake pork chops covered or uncovered?
Since the pork chops cook super quickly, they’re unlikely to dry out in the oven. Plus, the exposure to the heat allows the tops of the pork chops to get nice and golden!
How to store leftovers:
Leftover pork chops will last in an airtight container in the fridge for 3-4 days or in the freezer for 2-3 months. To reheat, thaw in the fridge if frozen, then warm in the oven until heated through.

JUICY Baked Pork Chops
Ingredients
- 4 thick cut boneless pork chops (about 1" thick) room temperature
- 2 tablespoons brown sugar
- 1½ teaspoons seasoning salt
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ¼ teaspoon ground mustard
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
- 1 tablespoon oil
Instructions
- Preheat oven to 425 degrees F and lightly grease a 9×13" baking dish — you want a baking dish that won't have a lot of extra room around the edges so that the juices don't burn on the bottom of the pan.
- Combine brown sugar, seasoning salt, garlic powder, Italian seasoning, mustard, pepper and paprika in a small bowl.
- Rub pork chops with oil and then coat well in seasoning on all sides.
- Place in prepared pan and bake for 13-15 minutes, until the internal temperature reaches 145 degrees F (the internal temperature is more important than the time! Different ovens and different thicknesses will cook at different rates). They should be light golden and look very juicy!
- Remove from the oven and serve.
Notes
- Use a 9×13″ baking dish. This is the perfect size for the four pork chops we’re using in this recipe. The key is to have a baking dish that doesn’t leave a lot of extra room around the edges so the juices don’t burn on the bottom of the pan. If you notice they are burning, just add a small splash of water to the pan.
- Check the temp. The internal temperature of pork should be 145ºF (you’ll need an instant-read thermometer to check). Once it reaches that, take the pork chops out right away so as not to overcook them! This is key for the best pork chops.
- Let it rest. After the meat is done cooking, cover with aluminum foil and let the pork chops rest for 10 minutes before slicing and serving. This gives the flavor and moisture time to settle back into the meat.

Hi Ashley,
I haven’t tried it as yet, but sounds wonderful and I can’t wait ti try it. My question is – Can it be made in an air-fryer since I’m told that air-fryers are basically and extension of an oven. I’m new to air-frying, so wanting to use my air-fryer more.
Thank you for all your wonderful recipes.
