How to freeze fresh pineapple for this drink:

Peel and core a fresh pineapple, then cut it into small chunks. Spread the pieces out in a single layer on a baking sheet lined with parchment paper. This helps the pieces freeze separately so they don’t stick together. 

Put the sheet in the freezer for a few hours until the pineapple is frozen solid. Once frozen, add them to the blender along with the other ingredients, or pop them in the freezer into a ziplock bag for another time!

Ingredients

  • 1 cup coconut milk (from a carton)
  • ½ can sweetened condensed milk (7 oz or 150 ml)
  • 1 teaspoon vanilla
  • 3 cups frozen pineapple
  • 1 cup ice
  • sweetened whipped cream (for serving, if desired)

Instructions

  • Add coconut milk, sweetened condensed milk, vanilla extract, frozen pineapple, and ice to the blender.
  • Blend until smooth. Taste and adjust as desired.
  • Pour into glasses and serve with whipped cream and a pineapple slice and toasted coconut if desired.

Notes

Ingredients and Substitutions:
Coconut milk: if it’s thick coconut milk from a can, use ½ cup and add ½ cup water.
Pineapple: you can use fresh or canned pineapple, but you may want to increase the ice.
