  • Pork tenderloin: Go for a roughly one-pound, trimmed tenderloin that doesn’t have any silver skin on it. This will cut down on prep time! Make sure to grab pork tenderloin and not pork loin, as pork loin is larger and won’t work in this recipe. 
  • Brown sugar: Brown sugar adds a bit of sweetness to balance out the savory pork and bacon. Light or dark brown sugar works!
  • Italian seasoning: A mix of dried herbs like oregano, basil, and thyme. It’s perfect for seasoning the pork without being too overpowering. You can use store-bought or make your own!
  • Garlic powder: Adds a savory depth to the pork. However, you can swap this for one clove of freshly minced garlic if you like!
  • Paprika: Adds a subtle smoky flavor. If you want extra smokiness, go for smoked paprika, or stick to regular for a milder flavor.
  • Thin-cut bacon: Choose thin-cut bacon so it crisps up nicely and doesn’t overwhelm the pork. Thick-cut bacon tends to take too long to cook and may not crisp up as well!

  • Mix together brown sugar, salt, Italian seasoning, garlic powder, pepper, and paprika in a small bowl.
  • Rub the seasoning mixture all over the pork tenderloin.
  • Wrap each bacon slice around the tenderloin, covering it completely.
  • Place the wrapped tenderloin in a baking dish and sprinkle the remaining brown sugar over the bacon.

Helpful tips:

  • Secure the bacon: When wrapping the bacon around the pork, make sure to overlap the edges slightly and tuck the ends under to secure them. This prevents the bacon from unraveling while cooking!
  • Crisp the bacon: If the bacon isn’t as crispy as you like, finish it off under the broiler for a couple of minutes. Just watch it closely to avoid burning!

How to store leftover Bacon Wrapped Pork Tenderloin:

To store leftovers, place the bacon-wrapped pork tenderloin in an airtight container and refrigerate for up to 3-4 days.

For longer storage, you can wrap the tenderloin in aluminum foil or pop it in a freezer-safe container for up to 3 months. Let it thaw in the fridge overnight before reheating!

To reheat, you can microwave it, but for the best results, warm it in the oven or air fryer at a low temperature to keep the pork tender and the bacon crispy.

Make-ahead option:

Ingredients

  • 1 pork tenderloin (about 1 lb) trimmed
  • 2 tablespoons brown sugar (divided)
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • 4-6 strips thin-cut bacon

Instructions

  • Preheat oven to 400℉.
  • Set tenderloin on a cutting board and let come to room temperature.
  • In a small bowl, stir together 1 tablespoon brown sugar, salt, Italian seasoning, garlic powder, pepper and paprika. Rub all over the pork tenderloin.
  • Starting at one end, wrap a piece of bacon around the tenderloin, then continue with another where that piece ends until the tenderloin is covered.
  • Place in a baking dish and sprinkle the remaining 1 tablespoon brown sugar over the bacon.
  • Bake for 30-35 minutes, until the bacon is crisp and golden (if the juices are burning in the pan, add a splash of water and continue roasting) and the internal temperature reaches 145℉.
