So this is my first popcorn recipe here on The Recipe Rebel.

Apparently I don’t really post a lot of snack recipes. Mostly because dinner = essential, and dessert = essential, but snacks? If I’m not snacking on dessert, I’m snacking on baking, or if I’m having a particularly good day I’m snacking on fresh fruit or a smoothie (a bad day? Bring on the emergency chocolate).

But I saw this recipe in the Taste of Home Celebrations cookbook and was immediately intrigued. I’ve made a few “no-nacho nacho flavored” recipes (like this Nacho Potato Soup and these Nacho Scalloped Potatoes — a couple of my favorites!), and I was curious to see how this popcorn stacked up.

I don’t actually even make a lot of popcorn. It used to be one of my favorite healthy things to snack on in the evenings, but with the kids being so small I think most evenings I’m just scared of starting up the air popper too soon and alerting the 3 year old.

But popcorn is such a great snack for the kids, too, especially if you can keep the processed junk off of it (not that I don’t eat any processed junk, but I think it’s for the best if we can at least limit it!).

The only thing I changed with the recipe from Taste of Home is that I left off the red chili flakes. We’re not really brave when it comes to spicy foods, the 3 year old in particular. It would be super easy to add some chili flakes or cayenne if you’re going for the spicy nacho effect!

Nacho Popcorn

Ingredients

  • 10 cups popped popcorn about 1/3-½ cups kernels
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 cup grated parmesan
  • 1/4 cup butter melted

Instructions

  • Place popcorn in a large bowl.
  • Combine paprika, cumin and parmesan in a small bowl.
  • Pour melted butter over popcorn, and sprinkle with spice mixture. Toss with hands until all pieces are evenly coated.

Notes

Spice things up!
Add some cayenne or red chili flakes to bring the heat.

    Hi Ashley! Popcorn is the perfect snack for me (well, I am also fond of pretzels). I recently won a gift card from King Arthur Flour at “Kevin Is Cooking” and one of the items I purchased was Vermont Cheese Powder – contents only dried Vermont Cheddar cheese. I have an air popper “somewhere”, but I usually microwave popcorn in a small paper bag. This is definitely a taste teaser! 🙂

    When I was a kid every Sunday night we watched a movie and got to eat snack food for dinner. It was such a great tradition! Popcorn was always always part of the mix! I might need to bring back the tradition and make this popcorn!

      We do this, too! And popcorn is always in the mix along with something sweet like brownies or cookies. It saves this momma from having to cook a full meal and we get to enjoy it along with a movie of some kind. I am definitely going to try this recipe! Thanks for sharing!
