This BBQ Bacon Cheeseburger Rice is an easy, one pot meal made with simple ingredients that the whole family will love!

Honestly, I’m not sure what’s with my sudden obsession with cheeseburger everything. Bacon Cheeseburger Cupcakes (yeah you read that right!) and now Bacon Cheeseburger Rice?!?

The thing is, I actually don’t like cheeseburgers.

(I know, crazy right?!)

I always, always, always skip the cheese on my burgers. Bun, burger, ketchup, pickles (and please don’t forget the pickles!) — that’s me.

It’s not that I don’t like cheese, or that I don’t like cheese and beef together (because you know I have plenty of those recipes!). I think the only reason is these preconceived notions about what I do and don’t like that I’ve carried through childhood.

Anyone else have any of those? I’m sure I’m the only one 😉

I’m going to keep things short today and let you get to the recipe. I love this dish because (a) it only uses one pot, (b) it’s EASY, and (c) it’s a crowd pleaser!

This is also one of those recipes that you could easily sneak lots of extra veggies into. I kept mine pretty basic, because I didn’t want anyone to feel like they had to add all of these extra things into it. But if you’re looking to add some extra nutritional value, you could easily add in a shredded carrot, some chopped spinach, or some mushrooms and that picky eater at your table won’t ever know.

One Pot BBQ Bacon Cheeseburger Rice

This BBQ Bacon Cheeseburger Rice is an easy, one pot meal made with simple ingredients that the whole family will love!

Ingredients

  • 2 slices bacon chopped
  • 1 lb lean ground beef or turkey would be great!
  • 1 teaspoon salt
  • 14 oz can diced tomatoes with liquid
  • 1 1/2 cups water
  • 2 cups instant rice
  • 1/2 cup barbecue sauce
  • 1 cup shredded cheese
  • 3-4 tablespoons sliced green onions

Instructions

  • In a large skillet over medium-high heat, cook bacon until crisp. Remove to a bowl lined with paper towel (to absorb the grease). Wipe out the skillet with a paper towel if necessary.
  • To the skillet, add the beef. Cook, stirring often, until browned. Add the salt and stir.
  • Add the tomatoes with liquid, water and rice and stir to combine. Bring to a simmer, cover skillet with lid or with a piece of foil, and reduce heat to medium low. Let cook for 4-5 minutes until rice is tender.
  • Uncover and stir in barbecue sauce, cheese, onions and reserved bacon. Adjust seasonings, adding more salt or barbecue sauce if desired.

    This recipe will definitely be a regular in my household! I ended up using jasmine rice since that’s all I had (got a ton of it from someone earlier this year), so it took some adjustments to get the liquid right. I started with the liquid in the recipe, and I added about half a cup of water at a time each time I went to stir everything. In total, I probably used about 3 to 3 1/2 cups of water. I also added the BBQ sauce at the same time as the first 1 1/2 cups of water, actually using some of that water to wash out the bottle of sauce since there was pretty much exactly 1/2 cup left in it.

    Anyway, this recipe definitely helped with my craving for a burger, without having to go out.

      I’m sure you definitely can but you would have to factor in the amount of liquid needed and time needed for basmati, and I’m not exactly sure what that is.

    I will pretty much always take the cheese when it is offered, haha! But I am with you on the pickle thing! I always have to have pickles! I love skillet rice dishes like this that can be eaten in one big bowl!

    I’m the same way. I never used to eat cheeseburgers so now that I’m older I kinda of forget that I like cheese sometimes. I’m weird that way. It has to be melted or I won’t eat it. 🙂 This recipe sounds and looks amazing. Perfect for a busy hectic day. Or if you’ve been in the kitchen all day and just can’t stand another second.

    Oh I would never skip the cheese on my burger! So I’ll take your cheese and I’ll give you my pickles (which I think are yucky!). I think that’s a far trade! This skillet looks amazing. I want it for dinner tonight!

    I don’t put cheese on my burger either but cheesy pasta or rice? Yes please! This would definitely be a big hit with my family! Yay for one pot and 30 minutes too 🙂

    I totally never get cheese on my burger. I feel like it gets lots beneath the mustard and ketchup and pickles, so there’s no point! But I definitely love cheese. And burgers. And bacon. So this rice looks amazing!! I love that it’s a quick meal to make!

    Hi Ashley! I practically lived on Spanish rice when I was younger (and poorer) – sometimes, budget permitting I’d add ground beef. I was inexpensive (I’ll date myself here – ground beef was $ .69 a pound back then, as was a gallon of milk) and filling. Funny thing is I still like it! I’m a burger, onion, pickles and mustard gal. Although I do like blue cheese on a good burger! 🙂

      Sometimes I even dream about the grocery prices we had 2 or 3 years ago! Haha. Meat is so expensive these days! Rice is definitely inexpesnive and a great filler! Blue cheese is definitely taking the good ol’ burger up a notch or two!

    I don’t like cheese on my burgers either…isn’t that funny? I would totally want cheese on this rice, however! My kids love ground beef and I don’t use it enough — I think they’d absolutely love this meal!

      Thanks Sam! You definitely would want to if you have a bit of grease in the pan after cooking the beef. I usually use lean ground beef and there really isn’t much to drain.
