Heat oil over medium-high heat in a large skillet.
Add potatoes, season with salt and pepper, and cook until tender on the inside and crispy on the outside, about 8-10 minutes.
Add ham, peppers and Italian seasoning and cook just until peppers are crisp-tender, 3-4 minutes.
With a spatula, create spaces for four eggs.
Crack the eggs into the spaces, sprinkle with salt and pepper and cook for 4-5 minutes, covering to set the egg whites.
Sprinkle with cheese and green onion and serve.

*The original recipe included scrambled eggs and sunny side up eggs. You can always push the vegetables to the side and scramble the eggs on one side of the pan for scrambled eggs if you prefer!
