Instructions
Preheat oven to 375 degrees F and spray a 9x13" baking dish with non stick spray.
In a large skillet, cook ground beef and onion, stirring frequently, over medium heat until browned and onion has softened.
Stir in the barbecue sauce, ketchup, relish, salt, ground mustard and pepper. Set aside.
Slice the rolls in half, separating the top from the bottom (leave them stuck together). Place the bottom buns in the baking dish.
Top bottom buns with a layer of cheese, tearing to fit if necessary. If using, spread Thousand Islands dressing on top of cheese.
Spoon the ground beef mixture carefully over the cheese. Top with another layer of cheese slices and add the pickles, evenly spaced. Top with the top buns.
Brush with melted butter and sprinkle with sesame seeds if desired.
Bake for 15-20 minutes, until cheese is melted and top buns are lightly toasted.
Slice and serve.

Notes
Ingredients and Substitutions:
Ground beef: feel free to swap the ground beef with ground turkey or chicken if you prefer, keeping in mind this will give them a different flavor.
Cheese: your favorite kind of cheese will work great!
Thousand Islands dressing: this is optional, and I know not all like it. If you'd rather, you can skip it or simply use mayo.
Storage:These sliders reheat surprisingly well! I recommend reheating in the oven or air fryer, uncovered, for the best (not soggy results).Make ahead:While I don't recommend making the sliders ahead, you can easily prepare the ground beef mixture in advance and refrigerate it for 3-4 days.
