This Spinach and Ham Breakfast Casserole is a healthy, hearty breakfast, lunch or dinner packed with whole grains, eggs, ham, spinach and roasted red peppers! It can be made in a mug in the microwave or in a casserole dish in the oven -- perfect for one or a crowd!
Lightly grease an 8x8" baking dish and add bread cubes.
In a medium bowl, whisk together eggs, milk, ham, spinach, red peppers, salt and parsley until smooth. Pour over the bread cubes.
Cover and refrigerate up to 24 hours before baking, or bake immediately.
Bake at 350 degrees F for 35-40 minutes until eggs are set in the center of the dish.

MUG: 1/4 cup milk 1 large egg 2 tablespoons chopped, all natural ham 1 tablespoon finely chopped fresh spinach 1 tablespoon roasted red peppers, chopped 1/4 teaspoon salt 1/4 teaspoon dried parsley 1 slice Dempster's 100% Whole Grains bread, cubed DIRECTIONS: Combine all ingredients in a large, lightly greased mug. Add bread and stir until combined. (OPTIONAL: cover and let sit overnight) Microwave on high in 1 minute intervals until eggs are set, about 3-5 minutes.
