An easy Overnight French Toast Casserole topped with peach cobbler — it's the BEST French toast I’ve ever had! So perfect for Spring, it's full of juicy peaches and a sweet, moist crumb topping!
8thick slices of French breadcubed, about 230 grams or ½ lb
4large eggs
1cupmilk
2teaspoonsvanilla extract
¼cupgranulated sugar50 grams
2cupssliced peachesfresh or canned, drained
Cobbler topping
¼cupbutter melted
¼cupgranulated sugar
½cupall-purpose flour
Instructions
Spray a 9×9" casserole dish (or 2-quart baking dish) with nonstick spray. Place bread cubes in the pan.
In a medium bowl, whisk together eggs, milk, vanilla, and sugar, and pour over the top of the bread cubes. Press the bread down into the liquid. Top with an even row of sliced peaches.
Cover with plastic wrap and set in the fridge for at least 2-3 hours or overnight.
For the cobbler topping, combine melted butter, sugar, and flour with a spoon until crumbly.
To bake: uncover and sprinkle the top of the casserole with the crumb topping. Bake at 350 degrees for 30-35 minutes until completely set and the cobbler is a crisp golden brown on top.
Serve warm with syrup if desired.

Notes
Store: Once this French toast is baked, it’s best enjoyed straight away. Any leftovers can be stored in an airtight container in the fridge for 3-4 days.
Reheat: Warm individual servings in the microwave or heat up a larger amount in the oven, covered in foil.
