Creamy Gemelli Pasta is super garlicky, cheesy, deliciously creamy, and so comforting! It's a family favorite of ours because hands down everyone loves it, and it's ready in just 20 minutes!
3clovesfreshly minced garlicor 2 if you prefer milder garlic flavor
2tablespoonsgrated Parmesan cheese
salt and freshly cracked black pepper as needed
Instructions
Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions.
Reserving 1 cup of pasta water, drain the pasta, and remove it from the pot.
Add the cream, cream cheese, garlic, and Parmesan to the pot. Cook the mixture and stir just until the cream cheese is melted. This will take about 3-4 minutes.
Add the pasta back into the pot with the sauce, and gradually add in the cup of the reserved pasta water until the sauce comes together to the desired consistency. It will continue to thicken, so don't toss the pasta water too soon! You might want to add more later on.
Season with additional salt and freshly cracked black pepper as needed after tasting.

Store: Store this dish in an airtight container in the refrigerator for up to 4 days. Allow the pasta to cool to room temperature before putting it in the fridge. Reheat on the stovetop or in the microwave. You may need additional water if it's too thick.
Freeze: Freeze leftovers in a freezer-safe container for up to 3 months. Defrost in the refrigerator overnight and reheat on the stovetop or in the microwave. Freezing this dish works better if you use full-fat cream and cream cheese.
