Chicken Rice Soup (Stovetop or Slow Cooker
INGREDIENTS: • oil • onion • carrots and celery • garlic • dried parsley and thyme • low sodium chicken broth •uncooked chicken breast • long grain brown rice • evaporated milk
In a large soup pot, heat oil over medium-high heat. Add onion, carrots and celery and cook and stir for 3-4 minutes, until onion begins to turn golden.
STEP 1
Add garlic, parsley and thyme and cook 1 minute.
STEP 2
Add broth to pot.
STEP 3
Add uncooked chicken breast to pot.
STEP 4
Add uncooked, rinsed rice to pot. Bring to boil. Cook for 30 minutes.
STEP 5
Remove chicken from pot and shred. Add back to the pot.
STEP 6
Add evaporated milk. Stir and serve.
