This Spinach and Ham Breakfast Casserole is a healthy, hearty breakfast, lunch or dinner packed with whole grains, eggs, ham, spinach and roasted red peppers! It can be made in a mug in the microwave or in a casserole dish in the oven — perfect for one or a crowd! Includes how-to recipe video

So the hubs and I have been busy cleaning out the post-holiday candy cupboard.

It’s been a painfully long process (do you feel me? 😉 ), but our shelves are looking cleaner (in so many senses) and we’re ready to cook healthier meals and indulge a little less.

If you know me at all, you know there’s pretty much nothing that compares to my love of breakfast foods.

Breakfast for breakfast, lunch or dinner — all day long, every day, sweet or savory. I wouldn’t complain.

This breakfast casserole (or strata, if you’re into little big words like that) is loaded with all kinds of good, 100% natural ingredients that will keep you satisfied throughout the day: Dempster’s 100% Whole Grains 12 Grains Bread (made with no artificial colors or flavors!), milk, eggs, all natural ham, spinach and roasted red peppers.

It is an easy, delicious, healthy, make ahead meal in one — which is the best kind, if you ask me!

And best of all? You can make it for one, or make it for a crowd. Stir it all together, and take it out in the morning and simply bake or microwave. There is really no excuse not to eat well in the morning, or any time of day, even though I occasionally try to convince myself otherwise.

I would love to hear what your favorite quick and healthy breakfast or lunch (or brinner) ideas are! We are always in need of more things to make on the fly, because 2-year-olds and 4-year-olds aren’t known for being particularly patient.

Ingredients

  • 8 slices Dempster’s 100% Whole Grains bread cubed
  • 6 large eggs
  • 1 1/2 cups milk
  • 1 cup chopped all natural ham
  • 1/2 cup finely chopped fresh spinach
  • 1/2 cup roasted red peppers chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon dried parsley

Instructions

  • Lightly grease an 8×8″ baking dish and add bread cubes.
  • In a medium bowl, whisk together eggs, milk, ham, spinach, red peppers, salt and parsley until smooth. Pour over the bread cubes.
  • Cover and refrigerate up to 24 hours before baking, or bake immediately.
  • Bake at 350 degrees F for 35-40 minutes until eggs are set in the center of the dish.

Notes

MUG:
¼ cup milk
1 large egg
2 tablespoons chopped, all natural ham
1 tablespoon finely chopped fresh spinach
1 tablespoon roasted red peppers, chopped
¼ teaspoon salt
¼ teaspoon dried parsley
1 slice Dempster’s 100% Whole Grains bread, cubed
DIRECTIONS: Combine all ingredients in a large, lightly greased mug. Add bread and stir until combined. (OPTIONAL: cover and let sit overnight) Microwave on high in 1 minute intervals until eggs are set, about 3-5 minutes.
