Easy Pizza Smashed Potatoes

These Pizza Smashed Potatoes are made in the microwave (though you could do them in the oven if you wanted!) and are only 4 simple ingredients. Plus they’re easy enough for the kids to make themselves!

Before our littlest girl was born, I spent a lot of time in the kitchen with my then-2-year-old girl. It’s amazing how many jobs you can find for the little ones to help you with in the kitchen that they can handle themselves! Often, I would do the measuring and she would dump the ingredients in the bowl and help mix (though I’d be sure to give it a good stir after she was done!), and and she’d always help me add the toppings to things like pizza and garnishes on all kinds of desserts and baking.

Since her sister is getting older and walking (yes, walking! At 9 months!), and into everything that her older sister is, they usually go off and play together while I’m in the kitchen. They get along great (but I mean, they’re sisters so…), and it’s so fun to see them just enjoying being together.

I’ve been noticing lately how much I’ve missed having my oldest girl in the kitchen with me, so we’ve started spending some time baking together after baby sister has gone to bed, and let me tell you — it is so good for the soul! It’s pretty rare that we actually get time to just be together, alone, and bake or cook, and she enjoys making a mess in the kitchen as much as I do.

And now that I’ve scared you all off with my sappiness, these Pizza Smashed Potatoes. Carbs and cheese can bring anyone back around.

I was inspired by the Little Chefs contest that The Little Potato Company is running along with the Marilyn Denis show to create a super simple appetizer that the kids can easily help out with, although we ate these for lunch twice so they also make an awesome, quick lunch when served with some veggies alongside. You can totally have these on the table in 1o minutes!

It’s hard to go wrong with 4 ingredients when they’re potatoes, sauce, meat and cheese. It’s also pretty hard to find a combination of those 4 things that I don’t like!

This is such a great recipe for the kids to make themselves, for an after school snack or even a quick lunch — my 3 year old could smash the potatoes by herself so there’s no reason not to have the kids take the lead on this one!

These are so easy to get creative with — add your favorite toppings (pretty much anything, as long as they are cooked to desired doneness before you put them on your potatoes), sprinkle with cheese and microwave just to melt the cheese. I used the Microwave Ready packs from The Little Potato Company to keep things simple and easy (and quick!) for the kids, but you can just as easily grab a bag of Blushing Belles or another varietal, roast them off in the oven, smash, top and broil the cheese if you want to do it that way. The oven would be a great way to cook them if you want to do a large amount for a party!

Easy Pizza Smashed Potatoes

These Pizza Smashed Potatoes are a fun snack for the kids made in the microwave!

Ingredients

  • 1 lb Savory Herb Microwave Pack from The Little Potato Company or about 1lb Little Potatoes
  • 1 tablespoon canola oil
  • 1 cup pizza sauce
  • roughly 18-20 slices pepperoni
  • 1 cup shredded mozzarella cheese

Instructions

  • Cook potatoes in microwave pack according to package directions (see notes below for alternate directions). Toss with oil and attached seasoning pack.
  • Place potatoes on a large plate (you can use the original container, but it won’t quite be large enough to hold all the potatoes in a single layer). Using the bottom of a glass, smash potatoes so they form a flat “crust” for your pizza.
  • Top with pizza sauce, a pepperoni slice, and sprinkle with cheese. Microwave for 1 minute on high or until cheese is melted.

Notes

*To use bagged Little Potatoes, coat with 1 tbsp oil, sprinkle with salt and roast at 400 degrees for 30 minutes or until cooked. Smash, top, and broil until cheese is melted.

      Haha, yes — “try” is usually the key word! In this case though my 3 year old can pretty much make the whole recipe herself, minus the microwaving part. By the end of our recipe testing she was an expert smasher 😉

    I bet your daughter loves being in the kitchen with you! That’s such a special memory that you all will have. I can remember helping my Grandma in the kitchen when I was little and I always love thinking about that. These smashed potatoes sound so good! I love the pizza flavor, you definitely can’t go wrong with that!
